Pumpkin Streusel Muffins

A lot of people enjoyed my chocolate chip pumpkin muffin recipe so I decided to try something a little different, pumpkin streusel muffins. I love everything pumpkin!

Streusel Ingredients

  • 3 tbsp sugar
  • 1 tbsp brown sugar
  • 1 tbsp all-purpose flour
  • ½ tsp pumpkin spice mix
  • 1 pinch salt
  • 1 tbsp unsalted butter
  • 1/4th cup raw pumpkin seeds

Muffin Ingredients

  • 1 1/3 cup all-purpose flour
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 ½ tsp pumpkin spice mix
  • 1 cup canned pumpkin purée
  • 4 tbsp vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract

PREPARATION

  • Preheat oven 350°F. Line a muffin pan with baking cups and set aside.

Streusel

  • Place sugar, brown sugar, flour, pumpkin spice mix, salt, melted butter and pumpkin seeds into mixing bowl and mix until combined. Set aside.

Muffins

  • Place flour, sugar, brown sugar, baking powder, baking soda, salt, pumpkin spice mix, pumpkin purée, oil, eggs and vanilla into mixing bowl and mix on medium high until combined.
  • Transfer batter to prepared muffin pan. Sprinkle reserved Streusel evenly over top of each muffin.
  • Bake 18 minutes (350°F).
  • Enjoy!
