Pumpkin Streusel Muffins
A lot of people enjoyed my chocolate chip pumpkin muffin recipe so I decided to try something a little different, pumpkin streusel muffins. I love everything pumpkin!
Streusel Ingredients
- 3 tbsp sugar
- 1 tbsp brown sugar
- 1 tbsp all-purpose flour
- ½ tsp pumpkin spice mix
- 1 pinch salt
- 1 tbsp unsalted butter
- 1/4th cup raw pumpkin seeds
Muffin Ingredients
- 1 1/3 cup all-purpose flour
- 1/3 cup sugar
- 1/3 cup brown sugar
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 ½ tsp pumpkin spice mix
- 1 cup canned pumpkin purée
- 4 tbsp vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
PREPARATION
- Preheat oven 350°F. Line a muffin pan with baking cups and set aside.
Streusel
- Place sugar, brown sugar, flour, pumpkin spice mix, salt, melted butter and pumpkin seeds into mixing bowl and mix until combined. Set aside.
Muffins
- Place flour, sugar, brown sugar, baking powder, baking soda, salt, pumpkin spice mix, pumpkin purée, oil, eggs and vanilla into mixing bowl and mix on medium high until combined.
- Transfer batter to prepared muffin pan. Sprinkle reserved Streusel evenly over top of each muffin.
- Bake 18 minutes (350°F).
